Lemon Tahini Sticky Cauliflower Rice

This vibrant, light and zingy cauliflower rice is wonderful on it's own, served with a warm curry, or your new main side squeeze. I love using thin slices of lemon rind, sliced raw on the thicker side for a more intensely yellow impact and sucker punch in your mouth. Enjoy!





Lemon Tahini Sticky Cauliflower Rice

  • 1 bag fresh or frozen cauliflower rice, warmed up to your liking
  • 1-2 tbsp pure tahini 
  • 1 whole lemon, zested or peel the skin and finely slice, and juiced
  • 1/4 cup green peas (optional) 
  • curry leaves (optional) 
  • pinch turmeric powder (optional)
  • 1 tsp coconut amino or pink Himalayan sea salt 
In a large bowl, toss all ingredients together. Top with fresh lemon zest or finely sliced peel using your knife. Enjoy warm or cool.
